Superstar chef Vikram Vij took a moment out of his busy schedule to chat
with us about the new Pilsner Urquell Perfect Pairing Cookbook.
Beer’s the new wine, people. You heard it here first.
Herewith, five question (in five minutes). And go!
1. I think many home cooks are used to the idea of wine as a cooking
staple, but what does beer bring to a dish that makes it unique?
VV: Beer can be used in lots of light batter of flour for great tasting
Fish and Chips. [Editor’s note: YUM]
2. Sometimes when using a cookbook, one can find mid-recipe that they
are short on this or out of that. What’s the best way to course correct
on a dish that may be going awry?
VV: Cooking is not supposed to
be exact, so what ever spices one has, they should cook and enjoy
however it turns out.
3. When you cook at home, do you allow
for a lot of freedom, or prefer a more structured system in the kitchen?
VV: I usually cook very whimsical, I never follow any structure but I
cook with a lot of passion.
4. Beer seems to be rivalling wine
for a spot at dinner parties. What’s your favourite dish to pair with
beer?
VV: I would definitely have some curry or spicy dishes
with a nice delicious beer.
5. If unexpected guests show up
and you want to make something quick and hot, what’s your go-to casual
dish?
VV: Rice and beans and a nice salad.
