Entering Manitoba’s long and elegant space, we were quickly informed the resto was booked up. Shoot. As we rotated our disappointed grimaces toward the door, we were told our table was ready. Quelle service!
As we settled into our bar-level, kitchen-facing corner nook, our gaze fixated on the high-energy, delicious food being prepped and plated in front of our eyes. Duck hearts, cow tongues, lamb legs and veal livers glistened in their mouthwatering glaze. Each dish we ordered was perfectly balanced with fresh veg or a side salad to complement the game-heavy menu. As our gizzards happily digested, we inquired about Manitoba’s concept and intention—contrary to its name, it’s actually one of few eateries in Montreal dedicated to utilizing seasonal offerings hailing from Quebec. Translation: all produce, seafood, and game comes from local vendors or is locally foraged by the proprietors themselves.
