The latest summer sipping craze comes from Queen West hot spot The Good Son, where chef de bar Moses McIntee’s been inspired by tea.
McIntee’s tea-cozy-worthy concoctions are infused with earl grey and green brews, as well as hand-crafted simple syrups made with locally sourced, seasonal ingredients like blueberries, goji berries and rhubarb. Letting in on his secret approach, the master told us, “All spirits can be paired with the right kind of tea. The botanicals in gin pair very well with tea—that’s my go-to pairing.” As for his fave summer drink? A basil margarita featuring tequila, lime juice, basil syrup and bitters, with an aloe foam to soften the acidity, add texture and brings all of the flavours together.
