With the best months of summer just around the corner, Canadians are looking to relax and have some fun in the sun. And what better way to spend summer days than by grilling up a delicious meal while enjoying an ice cold Molson Canadian Cider. Below is a recipe for Cider and Mustard Salmon and Vegetables, the perfect go-to light meal for the warmer days ahead.

Yield: 4 portions
Ingredients
- 4 green onions, finely sliced
- 500 ml (2 cups) snow peas
- 500 ml (2 cups) carrots, julienned
- 1 zucchini, sliced into rounds
- 2 stems of celery, finely sliced
- 675 g (1½ lb) filet of salmon, skin removed
- 45 ml (3 tbsp) Dijon mustard
- 30 ml (2 tbsp) old fashioned mustard
- 30 ml (2 tbsp) honey
- 125 ml (½ cup) Molson Canadian Cider
- Salt and pepper, freshly ground
- 45 ml (3 tbsp) fresh parsley, chopped
Preparation
Preheat the barbecue to high or the oven to 260oC (500oF).
On your counter or work surface, lay out a large rectangle of aluminum foil. Overlay with a slightly smaller rectangle of parchment paper. Arrange the vegetables on the parchment paper and top with the filet of salmon.
In a bowl, mix together the two mustards, honey and Molson Canadian Cider. Season generously and drizzle over the salmon.
Cover with a second rectangle of aluminum foil. Seal around the edges by folding and crimping the two sheets of aluminum foil.
Place the papillote directly on the barbecue grill. If cooking in the oven, place on a baking sheet. In both cases, cook for between 25 and 30 minutes.
Serve the salmon and vegetables with a well chilled Molson Canadian Cider.
Cider and Sesame Vinaigrette
Cooking time: None
Yield: 325 ml (1 1/3 cups)
Ingredients
- 125 ml (½ cup) mayonnaise
- 15 ml (1 tbsp) mirin
- 22 ml (1½ tbsp) grilled sesame oil
- 125 ml (½ cup) Molson Canadian Cider
- 1 French shallot, finely chopped
- 30 ml (2 tbsp) sesame seeds, grilled30 ml (2 tbsp) basil, freshly chopped
- 30 ml (2 tbsp) mint, freshly chopped
- Salt and pepper, freshly ground
Preparation
In a bowl, blend the mayonnaise, mirin and sesame oil.
Incorporate the Molson Canadian Cider and continue to stir.
Add the shallot, sesame seeds and herbs. Season to taste.
Note:
Sesame seeds may be grilled in the oven at 190°C (375°F) for between 5 and 7 minutes, or in a frying pan stirring frequently.
Suggestions:
This vinaigrette is delicious on lettuce, cabbage, carrot or other mixed vegetable salad.
