Chef Trevor Bird is at it again, this time greasy spoon style.
The Top Chef alum has taken his “farm to table” concept and applied it to simple, diner food with the newly opened Fable Diner. Sounds like the perfect combination. That means guilt-free greasy food, right? Why hasn’t this been done already?!
The all-day menu delivers culinary diversity, with everything from salads and salmon, to breakfast staples like French toast and duck pancakes, to diner favourites like grilled cheeses and burger and fries.
The new diner has famous shoes to fill, taking up home in the historic Lee building on the corner of Main and Broadway. The 86-seat, locally sourced eatery takes the reigns from legendary Vancouver greasy spoon Reno, with more than just a nod to its predecessor on the menu.
With the ambitious task of making everything from scratch in house, Bird and his team truly deliver when it comes to bringing the classic diner into the 21st century. —Aleeza Khan
