If frozen tater tots are on your list of nostalgic foods, you’ve got to give this updated, healthier version a try. With cauliflower as the star, they’re a perfect crispy little bite for breakfast, lunch or dinner!
Ingredients:
2 cups cauliflower, cut into florets 1/4 cup red onion, minced 2 garlic cloves, minced 1/4 cup cilantro, finely chopped 1/4 cup carrot, shredded |
2 eggs 1/2 teaspoon salt 1/2 teaspoon black pepper 1/4 cup + 1/2 cup bread crumbs 1/2 cup goat cheese 1/4 cup neutral cooking oil, for frying |
Method:
Steam cauliflower until fork tender. Drain water, and transfer to a food processor. Blitz until smooth. Transfer mixture to a bowl, and add red onion, garlic, cilantro, carrot, 1 egg, salt, pepper, 1/4 cup bread crumbs and goat cheese. Mix until well combined.
Prepare two small bowls, one with the remaining egg (beated), and one with bread crumbs. Form cauliflower mixtured into small balls, and coat in egg wash, then in bread crumbs.
Heat oil in a skillet on medium. Cook cauliflower tots 2-3 minutes on each side, until crispy all over. Serve immediately.
