Slurping up a bowl of pho is something we find ourselves craving every few weeks.
And with the opening of Pho Vistro downtown, there’s now a cosy bistro-style spot to do so. And while it’s in the heart of the city, the pho broth is made in the traditional way it’s done in Vietnam: that is, the beef-bone broth is slow cooked for twelve hours and them simmered for 30 hours, resulting in a rich and flavourful broth loaded with vitamins and minerals. With additional toppings such as oxtail, short rib and avocado, you also have the option to make your bowl of noodles to your taste (and even heartier). Not that you’ll be left hungry; we started with the Vietnamese-style chicken wings, which are delightfully sweet and savoury, and fresh spring rolls to whet our appetites.
Forget chicken soup for the soul, for us, it’s pho all the way. —Karen Kwan
