Mac & Cheese Bites With Panko Crumbs
In our opinion, Mac & Cheese should be a part of every celebration. A crunchy panko breadcrumb topper and fun handheld shape make this Amy’s vegetarian/vegan/GF favourite holiday-ready! (Makes 12 bites when using a standard muffin tin.)
Ingredients:
4 Amy’s Mac & Cheese or GF/DF Rice Mac & Cheeze
1 cup panko bread crumbs (or GF bread crumbs if you’re going gluten free)
4 tbsp butter (or Earth Balance if you’re making them vegan)
Non-stick cooking spray
Method:
Preheat oven to 400℉. Cook Amy’s Mac & Cheese for 2 minutes in the microwave until it is thawed enough to stir. Melt 3 tablespoons of butter or Earth Balance in the microwave. Add the panko crumbs to the melted butter and stir until well-coated. Spray the cups of a muffin tin with non-stick baking spray and scoop the Mac & Cheese into cups. Pat down the Mac & Cheese gently. Top each mac muffin bite with buttery panko crumbs. Bake bites in the oven for 30 minutes or until the crumbs are golden brown and crispy.
