Authentic and all-natural, this traditional Italian dry-cured ham, now available at retailers across the country, is 100 per cent preservative-, additive-, hormone- and gluten-free and crafted in Parma, in North-Central Italy, using only four ingredients—pork, sea salt, air and time—to create the most mouthwatering, savoury-sweet prosciutto we’ve ever tasted. The process (age-old, and passed down from generation to generation) is fascinating in itself: the pigs are specially bred (to the highest standards), highly experienced maestri salatori (salt masters) apply just the right amount of sea salt to produce just the right flavour and the total curing period lasts at least 365 days (patience really is a virtue!).
