Le Creuset’s latest colour launch, blueberry, includes this iron handle skillet ($210)—and provides a great way to serve up breakfast in bed on Mother’s Day (cue the pancake recipe below). Enjoy!
Blueberry Dutch Baby Pancake
Ingredients:
2/3 cup milk, room temperature
1/2 cup all-purpose flour
3 eggs, room temperature
1/4 tsp pure vanilla extract
1 tsp sugar
1/4 tsp salt
4 tbsp butter
2 tbsp lemon juice
2 cups blueberries
1 tbsp icing sugar
Method:
Preheat oven to 425 F. Blend milk, flour, eggs, vanilla extract, sugar and salt together in a blender until batter is smooth. Melt 3 tbsp of butter in a Le Creuset iron handle skillet over high heat until bubbling; pour batter into the centre of the skillet. Bake in the oven until puffed and golden, about 20 to 25 minutes. Remove from the oven and brush with remaining butter, drizzle lemon juice over the top, add blueberries and dust with icing sugar.
