Hasta Be Bertolli Pasta Sauce (Recipe + Win!)

July 10, 2018

When a basket of Bertolli red and white pasta sauces (available now in Canada for the very first time) arrived at our door, we were chomping at the bucatini to try them.

bertolli

Available in six flavourful varieties—Tomato & Basil, Olive Oil & Garlic, Five Cheese, Marinara, Creamy Alfredo and Garlic Alfredo—at IGA, Safeway and Walmart, these were honestly some of the yummiest, freshest-tasting store-bought noodle toppers we’ve ever tried, thanks to the traditional Tuscan ingredients and cooking methods behind them. Spaghetti With Burrata & Blistered Cherry Tomatoes

bertolli

Creamy burrata cheese, roasted garlic and baked tomatoes drizzled with olive oil—what more could you ask for in a pasta dish? Your dinner company will be impressed from the very first bite!

3 tbsp Bertolli Organic Extra Light Tasting Olive Oil
285 g (10 oz) uncooked spaghetti
1 tsp kosher salt
1 jar (630 mL) Bertolli Traditional Marinara with Italian Herbs & Fresh Garlic Sauce
1/2 cup loosely packed fresh basil, torn
3 cloves garlic thinly sliced
450 g (1 pound) cherry tomatoes on-the-vine
1/4 tsp ground black pepper
225 g (8 ounces) burrata cheese, cut into bite-size pieces

Preheat oven to 350˚F (180°C). Combine oil and garlic in small bowl. Cook pasta in salted water 1 min. less than directed on package; drain and return to pot. Cut tomatoes into 5 clusters, leaving stems and vines intact; place on rimmed baking sheet. Drizzle with garlic-oil mixture and season with salt and pepper. Bake 18-20 min. or until tomatoes begin to blister and garlic is lightly browned. Add sauce to pot with hot pasta; toss constantly 1-2 min. or until well coated. Add cheese and basil; gently combine. Divide pasta mixture among serving plates. Place a cluster of roasted tomatoes on top of each serving. Drizzle with any remaining oil or tomato liquid from baking sheet.

Tips: Substitute loose cherry tomatoes, grape tomatoes or multi-coloured heirloom tomatoes for the cherry tomatoes on-the-vine.Substitute spoonfuls of full-fat ricotta cheese or small bite-size fresh mozzarella cheese balls for the burrata cheese.
