What’s more fun than throwing snowballs? Eating them! This recipe is from Vancouver baker and blogger Fanny Lam‘s newly released cookbook, Oh Sweet Day! A Celebration Cookbook of Edible Gifts, Party Treats and Festive Desserts. Super easy to make, you can have 30 buttery, nutty snowballs ready to go in just 10 minutes (making it the perfect contribution to your holiday cookie exchange or a simple last-minute holiday dessert). Watch out though, they’re addictive and soon you’ll be making mounds of them!
Snowball Cookies
1 cup cake flour
1 1/2 cups nuts of your choice (walnuts, pecans, almonds, cashews, hazelnuts or pistachios)
1 tsp salt
2 tbsp granulated sugar
1 tsp vanilla extract
1/2 cup unsalted butter, softened
1 cup powdered sugar
Preheat oven to 300 F. Line 2 cookie sheet pans with parchment paper. In a food processor, blend together the flour, nuts, salt and sugar, until the nuts are finely chopped. Mix in vanilla until combined. Scatter in the butter in small pieces. Mix until the mixture resembles wet sand. Shape the dough into tablespoon-sized balls. Place them on the prepared cookie sheets, leaving an inch apart between the cookies. Bake 30 to 35 minutes. Let cool for 10 minutes. While the cookies are still warm, roll them in the powdered sugar. Let cool completely.
Add some love … 30 cookies may only be able to make two or three of your friends happy. Feel free to double or even triple this recipe to make more cookies! —Vita Daily
