Bacardí Passionfruit Mojito
2 parts Bacardí Superior
1 part passion fruit juice or nectar
3/4 parts simple syrup (500 ml hot water and equal volume of sugar)
6 mint leafs
1 part fresh lime juice
In a highball glass, add the hand-clapped mint leaves, passion fruit juice, simple syrup, lime juice and rum. Fill glass with crushed ice and stir vigorously. Top with more crushed ice and soda. Garnish with fresh mint leaves and fresh passion fruit.
