2 oz Bombay Sapphire gin
1 oz lemon juice
1 oz rhubarb syrup
3 fresh strawberries
3 fresh mint leaves
Top with soda water
To make rhubarb syrup, take five cubed stalks of rhubarb and equal parts sugar and water. Boil four cups of water. Add cubed rhubarb and two cups of sugar and stir gently until sugar is dissolved and rhubarb is bright red. About 10 minutes. Allow to cool. Double strain mixture into sterile container, preferably glass. Will last for two weeks in fridge. To mix drink, muddle strawberries and mint in Boston shaker. Add all other ingredients over ice except soda water. Hard Shake to a count of 10. Strain over new ice-filled double rocks glass. Top with soda water, garnish with a mint leaf sprig and strawberry fan.
