Choose an appetizer, entree or dessert all bursting with parmesan flavour (think duck confit ravioli with parm foam, prosciutto-wrapped prawns on a parm biscuit, tableside cacio e pepe, venison rack with parm cream and, for dessert, a parm mousse with fire-roasted chestnuts, cherry blossom balsamic vinegar and a cheese tuile).
