Cheeseboards are the number 1 offering at holiday parties (remember holiday parties?); this year, we’re partying under lockdown, which means a lot more photo-sharing. It also means there’s no better time to up our Instagram game than with festive cheeseboards inspired by our favourite Christmas movies and using Castello cheeses! Food stylist Abe Wornovitzky channelled his artistry into three edible masterpieces inspired by some of the most beloved holiday characters: The Grinch, Frosty, and Rudolph the Red-Nosed Reindeer. Here’s how (and what you need to) make them. —Vita Daily
Knowing that not every cheese lover is a food stylist, Abe created the boards with that in mind. The Grinch is the simplest as it’s merely an arrangement of cheese and green ingredients that convey that characteristic Seuss-y frizz.
Selection of Castello cheeses, including:
• Castello Camembert
• Castello Brie
• Castello Cream Cheese with Chives
• Castello Fontina (wedge)
• Castello Aged Havarti, sliced
• Castello Tickler Extra Mature Cheddar, sliced
• Castello Danish Blue
Selection of green accompaniments, including:
• Frisée lettuce
• Broccoli
• Cucumber
• Sugar snap peas
• Granny Smith apples
• Green grapes
• Wasabi peas
• Pickled asparagus spears
• Kale chips
• Green olives
• Guacamole
The Frosty board is a more faithful reflection of the character but still easy to create. Thankfully, his body is constructed using complete wheels of Castello Brie and Castello Camembert (Abe recommends using Castello cheese throughout for its quality and variety)—with colour-blocked ingredients for the sky, hills, and an indulgent snowy mountain of Castello Aged Havarti and funky-delicious Danish Blue.

For the kitchen-adventurous, there’s Rudolph, who takes a bit of extra time to sculpt from bricks of Castello Tickler, but the final result is worth it (as are the yummy crumbles of Tickler that you carve away). There’s an instructional video and a downloadable template for Rudolph’s head available online.
