4 Vitamix Vegan Day Recipes

November 1 marks Vegan Day 2021, and we’ve got four fabulous plant-based recipes from Vitamix to share! —Vita Daily

Vegan Avocado Chocolate Torte

2⅓ cup (350 g) hazelnuts, divided use
½ cup + 1 Tablespoon (120 milliliters + 1 Tablespoon) coconut oil, divided use
1 pinch salt, optional
1 cup (150 g) dates
1 vanilla bean
½ cup (120 ml) agave nectar
5 avocados, peeled, seeded
1 cup (100 g) cocoa powder
3 Tablespoons goji berry powder

Place half of the hazelnuts into the Vitamix 1.2-litre container and secure lid. Pulse quickly. Continue to Pulse 8 to 12 more times, using tamper to press ingredients into the blades. Repeat with second half of the nuts. Remove to a bowl. Add 1 Tablespoon coconut oil and salt, optional to the ground nuts in the bowl. Mix to incorporate. Press into a spring form pan. Place 1/2 cup (120 ml) coconut oil, dates, vanilla bean and agave into the Vitamix 1.2-litre container in the order listed and secure lid. Start the machine and slowly increase to its highest speed. Blend for 25 seconds, using the tamper to press the ingredients into the blades. Remove and place in a bowl. Place 2 ½ avocados in the Vitamix 1.2-litre container and secure lid. Start the machine and slowly increase to its highest speed. Blend for 30 seconds. Add to the bowl with the date mixture. Repeat the process for the second ½ of the avocados. Add the cocoa powder and goji berry powder to the bowl with the avocado and date mixture. Mix to incorporate. Spoon mix over top of the hazelnut crust, wrap in plastic, and place in refrigerator overnight to set. Slice torte just before serving.

Black Bean Burgers with Sriracha Aioli

2 cans (850 g) black beans, drained, rinsed
½ medium (60 g) medium onion
½ cup (20 g) fresh cilantro leaves
4 small garlic cloves, peeled
4 teaspoons low sodium soy sauce
1 teaspoon kosher salt, optional
½ teaspoon ground black pepper
1 cup (120 g) Panko breadcrumbs, or chickpea bread crumbs
¼ cup (60 ml) aquafaba, or 1 egg
8 hamburger buns
½ cup (120 g) vegan mayonnaise, or mayonnaise
2 teaspoons Sriracha sauce
2 teaspoons fresh lime juice
4 cups (80 g) baby arugula

Place black beans, onion, cilantro, garlic, soy sauce, salt, pepper, panko, and aquafaba into the Vitamix container in the order listed and secure the lid. Select Variable 8. Pulse 8 to 10 times, using the tamper to press the ingredients into the blades. For a smooth textured burger blend on the highest speed for 20-30 seconds. Remove from container and place in a bowl. Let stand 15 to 20 minutes. Divide mixture into 8 patties. Arrange patties onto a baking sheet coated with nonstick spray. Bake at 425°F (220°C) for 8 to 10 minutes. Flip over and bake an additional 6 minutes. For Sriracha aioli, mix the Sriracha, mayonnaise and lime juice together. Assemble burgers on buns with arugula and Sriracha mayo.

Vegan Pea and Kale Soup

2 1/2 cups (600 ml) vegetable broth
2 cups (325 g) frozen sweet peas, thawed
3 cups (90 g) kale
1/2 cups (5 g) Italian flat leaf parsley, fresh
2 teaspoons medium onion, peeled
1/2 garlic clove, peeled
1 teaspoon salt, optional

Place all ingredients into the Vitamix container in the order listed and secure lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes and 45 seconds, or select Hot Soup program and allow machine to complete programmed cycle. Garnish with snap peas if desired. Serve immediately.

Alan’s Going Green Smoothie

1 cup (240 ml) water
2 cups (300 g) green grapes
2 slices (170 g) pineapple, peeled, halved
1 (150 g) medium bananas, peeled
2 medium limes, peeled
½ cup (70 g) cashews, roasted, unsalted
2 jalapeño, stemmed, seeded
4 cups (120 g) fresh spinach
2 cups (260 g) ice cubes

Place all ingredients into the Vitamix container in the order listed and secure lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute or until desired consistency is reached, using the tamper to press ingredients toward the blades. Note: Additional spinach or ice may be added through the lid plug opening while blending to maximize container usage, and for extra nutrients!
