Spring Smoothie Bowls

Brighten your mom’s morning with a colourful, floral smoothie bowl. Topped with fruity and edible flowers, this nutritious bowl is packed with antioxidants and can be made with your choice of one of Evive’s two best-selling flavours: Touk-Touk and Viva.

Pink Smoothie Bowl:
1 Viva wheel
1 cup oat milk
½ cup strawberries
½ tsp. cinnamon powder
Toppings: kiwi, mango, granola, and edible flowers

Yellow Smoothie Bowl:
1 Touk-Touk wheel
1 cup oat milk
¼ cup bananas
¼ cup mangos
¼ cup coconut yogurt
Toppings: kiwi, mango, granola, and edible flowers

Using cookie cutters, cut different shapes into the kiwi, mango, or fruit of your choice. In a high-speed blender, mix the ingredients for each smoothie until smooth. Top each smoothie with fruit, edible flowers and granola.

Fluffy Pink Pancakes

A fun twist to your regular pancakes, Evive has created an easy recipe to turn your pancakes pink and vegan. Layered with a fluffy pink buttercream, these pancakes are sweet, delicious and loaded with organic fruits and veggies. Decorate with spring flowers and berries to really make it shine.

Viva Pancakes:
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
Pinch of sea salt
4 Viva cubes, softened
1 ½ cups nut milk
2 tbsp. avocado oil
2 tbsp. maple syrup
2 tsp. vanilla extract
Optional: 1 tsp. beetroot powder for additional colour

Viva Buttercream:
½ cup vegan butter
4 Viva cubes, softened
1 ¾ cups icing sugar
1 tsp. vanilla extract
Pinch of sea salt
Optional: 1 tsp. beetroot powder for additional colour

Using an electric mixer, cream together all the ingredients for the buttercream until smooth. Set aside. In a small bowl, combine all the dry ingredients for the pancakes. In a medium bowl, puree the softened Viva cubes with a fork. Combine the rest of the wet ingredients in the same bowl and stir until combined. Whisk together the dry and wet ingredients until just combined. Be careful to not overmix. Heat a lightly oiled pan over medium heat. Cook the pancakes for approximately 2-3 minutes per side until slightly golden and cooked through. Top with Viva buttercream and fresh fruit!
