Chicken & Barley Salad With Chickpeas & Feta
Dressing:
¼ cup lemon juice
1 clove garlic, grated
1 tsp dijon mustard
1 tsp honey
½ tsp fresh thyme leaves
¼ cup extra virgin olive oil
Pinch each salt and pepper
Salad:
2 large carrots, peeled and thinly sliced on bias
1 ½ cups green beans
8 cups baby arugula
1 1/2 cup cooked pearl barley
1 19 oz can low sodium chickpeas, drained and rinsed
2 cooked chicken breasts, sliced
2 oz feta (optional)
⅓ cup chopped pistachios (optional)
Mix the salad dressing ingredients together in a container with a lid and shake well. Set aside. Add a few inches of water to a saucepan and add the carrots and green beans. Steam until crisp tender, about 6-7 minutes. Plunge into an ice bath. To a large salad bowl, add the arugula, barley, chickpeas, green beans, and carrots. Top with the chicken breasts. Drizzle with salad dressing and top with feta and pistachios if desired. Serves 4.
