Vegan Marshmallow Bites By Mykaela Erb
A delicious chocolate snack topped with torched marshmallows, this recipe is created with Evive’s Azteque smoothie wheel. The Azteque is a creamy, cacao blend packed with superfoods like goji berry and is an excellent source of Vitamin C, D, B12, potassium and iron. Paired with healthy fats and natural sweeteners like vanilla and coconut milk, these drool-worthy bars are a huge hit with anyone who has a sweet tooth for chocolate.
Graham Cracker Layer:
57g graham crackers
½ cup raw pecans
⅓ cup almond butter
2 tbsp. maple syrup
2 tbsp. coconut oil
1 tsp. vanilla
Pinch sea salt
Chocolate Azteque Layer:
1 Azteque wheel
1 cup vegan chocolate chips (dark or semi-sweet)
⅔ cup coconut milk (only use thick coconut part and discard water)
2 tbsp. coconut oil
1 tsp. vanilla extract
Pinch sea salt
1 cup vegan mini marshmallows
Line an 8×8 inch baking sheet with parchment paper. In a food processor, combine all of the ingredients for the graham cracker layer and pulse until well combined. Spread evenly on the baking sheet. In a saucepan, heat the ingredients for the chocolate Azteque layer on medium-low heat until melted and smooth. Pour evenly over the graham cracker layer. Place in the freezer for a minimum of 4 hours, until set. Cut into 16 pieces and top each piece with mini marshmallows. Optional: Use a baker’s torch to roast the tops of the marshmallows or broil the marshmallows on a baking sheet until slightly golden before placing them on top of the squares.
