Next, it’s truffle venison tartare paired with Legacy Collection 2017 Quatrain. The main is dry-aged winter spiced duck paired with Legacy Collection 2017 Compendium, and cocoa-nib-crusted short rib paired with Legacy Collection 2018 Oculus. The dessert station will include: a “Frozen Lake Okanagan” anti-griddle station (maple walnut ice cream popsicles); pistachio-raspberry tart; and dark-cherry dacquoise. The wine pairing: Terroir Collection 2014 Silver Ranch Vineyard Riesling Icewine.
