Watermelon Beauty Slushie

Hydrating watermelon, superfood goji, and juicy strawberries are a match made in adult slushie heaven. Blend it up in 5 minutes or less and transport yourself poolside. Makes 2.

1 cup water or coconut water
1 cup frozen diced seeded watermelon
1 cup frozen strawberries
2 teaspoons goji berries (see page 29)
1 teaspoon raw honey (optional)

In a high-speed blender, combine all the ingredients. Blend for 30 to 60 seconds, stopping to scrape down the sides of the blender as needed. Pour into your favorite glass, slurp, and enjoy.

Savory Miso Oatmeal With Green Onions

Have you hopped on the savory oatmeal train yet? Simple, nutritious, and satisfying, savory oats feel like a quick-cooking risotto that you get to indulge in at breakfast time (heck yes to that!). If you’re like me and always trying to get more veggies into your day, these oats are a delicious vehicle for them. I like to use a mixture of broth and water for the cooking liquid, which makes for flavorful (but not overly salty) oats. Serves 2.

1 tablespoon coconut oil, ghee, or butter
3⁄4 cup quick-cooking oats
2 green onions, thinly sliced, divided
2 cups water, bone broth, or vegetable broth (or a combination)
1 tablespoon white miso paste
Salt and freshly ground black pepper
Soft-boiled eggs, toasted sesame seeds, sriracha, and/or tamari, for serving (optional)

In a medium saucepan, combine the coconut oil, oats, and half of the green onions. Cook over medium heat for 3 to 4 minutes, until the oats are aromatic and take on a bit of color. Add the water and bring to a simmer over medium-high heat. Reduce the heat to medium-low. Cover and cook for 8 to 12 minutes, stirring occasionally, until the mixture is creamy and most of the water has been absorbed. Stir in the miso until it dissolves. Taste and season with salt and pepper if needed. Serve immediately with the remaining green onions and any or all of the suggested toppings.

Chaga Mint Chocolate “Nice” Cream

“Nice” cream is the plant-based darling of the ice cream world: frozen sliced bananas are blended up into a shockingly convincing, scoopable icy dessert. This version channels flavors of Peppermint Patties and mint-chip ice cream, but sneaks in superfoods like cacao, chaga, and hemp seeds for a chocolatey blend with benefits. Serves 2.

3⁄4 cup plant-based milk, plus more as needed
2 large bananas, peeled, frozen, and sliced into 3⁄4-inch pieces
2 tablespoons raw cacao powder (see page 27)
1 tablespoon hemp seeds
1⁄3 teaspoon pure peppermint extract
1 teaspoon maple syrup
1 teaspoon chaga powder (optional)
Pinch of salt
Cacao nibs, toasted coconut flakes, and/or Salted Tahini “Caramel”, for topping (optional)

In a high-speed blender or food processor, combine all the ingredients except the toppings. Blend for 45 to 60 seconds, stopping often to scrape down the sides, until creamy and combined. If your blender or food processor is struggling, add a splash of milk to help move things along. Scoop the mixture into cones or bowls and top as desired. Revel in the chocolate goodness.
