Looking for a rainy Sunday comfort dish? Here’s a recipe for a delicious tomato-topped quiche.
- 1 pre-made pie crust (or you can make your own from scratch)
- 4 large eggs
- 1 cup whole milk
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- 1/2 cup crumbled feta cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp chopped fresh basil
Preheat your oven to 375°F (190°C). Roll out your pie crust and place it in a 9-inch pie dish. Crimp the edges and set aside. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, and black pepper. Stir in the shredded Swiss cheese and crumbled feta cheese. Pour the mixture into the prepared pie crust. In a small bowl, toss the cherry tomato halves with olive oil and arrange them on top of the quiche. Bake the quiche in the preheated oven for 35-40 minutes, or until the centre is set and the top is golden brown. Remove the quiche from the oven and allow it to cool for a few minutes. Sprinkle chopped fresh basil over the top of the quiche before serving.
