- 10 cups of popped popcorn (plain, unsalted)
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 tsp baking soda
- Salt to taste
Preheat your oven to 250°F. Spread the popcorn on a large baking sheet lined with parchment paper. In a saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt, and stir until everything is combined. Increase the heat to medium-high and bring the mixture to a boil, stirring constantly. Once the mixture comes to a boil, let it cook for about 5 minutes without stirring. Remove the saucepan from heat and stir in the baking soda (this will cause the mixture to foam). Pour the caramel mixture over the popcorn and toss to coat evenly. Bake the popcorn in the preheated oven for 1 hour, stirring every 15 minutes.
