Recipe: Spinach and Mushroom Frittata

Ingredients:

  • 6 large eggs
  • 1/4 cup milk or cream
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach leaves
  • 1/2 cup shredded cheese (such as cheddar, mozzarella, or feta)
  • Salt and pepper to taste
  • Optional toppings: chopped herbs (such as parsley or chives), diced tomatoes, or sliced avocado

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined. Set aside.
  3. Heat the olive oil in an oven-safe skillet over medium heat.
  4. Add the sliced mushrooms to the skillet and sauté for about 3-4 minutes until they begin to soften.
  5. Add the fresh spinach leaves to the skillet and cook for an additional 1-2 minutes until wilted.
  6. Reduce the heat to low and pour the egg mixture evenly over the mushrooms and spinach in the skillet.
  7. Sprinkle the shredded cheese on top of the eggs.
  8. Cook the frittata on the stovetop for 3-4 minutes until the edges start to set.
  9. Transfer the skillet to the preheated oven and bake for about 12-15 minutes, or until the eggs are fully set and the top is golden brown.
  10. Remove the skillet from the oven and let the frittata cool for a few minutes.
  11. Carefully slide a spatula around the edges of the skillet to loosen the frittata.
  12. Cut the frittata into wedges and serve warm. Optionally, you can top it with chopped herbs, diced tomatoes, or sliced avocado for extra flavor and freshness.
