Tabouli, also known as tabbouleh, is a refreshing Middle Eastern salad that’s perfect for summer. Here’s a recipe for a delicious summer tabouli salad:
Ingredients:
- 1 cup bulgur wheat
- 1 ½ cups boiling water
- 2 cups finely chopped fresh parsley
- ½ cup finely chopped fresh mint leaves
- 1 cucumber, finely diced
- 2 medium tomatoes, finely diced
- 4 green onions, thinly sliced
- Juice of 2 lemons
- ¼ cup extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- Place the bulgur wheat in a large bowl and pour the boiling water over it. Cover the bowl with a plate or plastic wrap and let it sit for about 20 minutes to allow the bulgur to absorb the water and soften.
- While the bulgur is soaking, prepare the vegetables. Finely chop the parsley and mint leaves, dice the cucumber and tomatoes, and thinly slice the green onions. Place them all in a separate bowl.
- Once the bulgur has absorbed all the water and is tender, drain any excess liquid and fluff it with a fork.
- Add the bulgur to the bowl with the vegetables and herbs. Mix well to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the bulgur and vegetables, and toss everything together until well coated.
- Taste and adjust the seasoning if needed. You can add more lemon juice, olive oil, salt, or pepper according to your preference.
- Let the tabouli salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve the tabouli salad chilled as a side dish or as a light main course. It’s great on its own or paired with grilled meats, falafel, or pita bread.
