The popsicle—our favourite fruity and refreshing summer treat—couldn’t be simpler to make from home. Simply bust out the blender, pour treats of choice into a mould, and pop homemade creations into the freezer for next day enjoyment. Made with plant-based and seasonal ingredients, we’re letting readers in on our best kept summer secret with our three favourite homemade combinations, below. —Julia Dumbrell
Zesty Lemon and Blackberry
The perfect popsicle for those who love the combination of sweet, tart and sour. Combine half the juice of a lemon and the skin’s zest with a generous handful of puréed blackberries and four cups of Greek yogurt. Mix this combination well, freeze overnight and enjoy in the morning (we won’t judge if they become breakfast)!
Dreamy Orange Treat
These bright, vibrant popsicles transport us to a tropical destination from the first lick. Mix an entire mango, skinned and puréed, with a splash of orange juice and a few tablespoons of honey. The frozen result manifests beachy, dreamy perfection.
Limey Watermelon Mojito
Put the joy of a mock-mojito on a stick. This recipe combines 3 cups of puréed watermelon slices with fresh mint leaves, the juice of half a lime and a tablespoon of honey. Freeze within a popsicle mould and experience our new favourite way to enjoy minty mojito flavours, mere hours later.
