You have GUAC to be kidding us! Falling on September 16, International Guacamole Day is often overshadowed with the back-to-school blues. Yes, it is unfortunate, however, this year Rosalinda is reclaiming September as the “Month of Guac.” Toronto’s favourite vegan restaurant has graciously provided the recipe for its famous guacamole created by chef Juan Alvarez. Its combination of fresh avocado, tomatoes and jalapeno makes this guacamole a mouth watering favourite that we know you will enjoy, whether at Rosalinda’s aesthetic dining room or from the comfort of home. —Vita Daily
Rosalinda’s Famous Guac
4 avocados
⅔ cup of red onion
2-3 cloves of garlic
Jalapeño to taste (½ cup recommended)
Juice of 2-3 limes
3 tbsp of cilantro
2 tsp of salt (or to taste)
1 medium tomato (optional)
1 tsp Olive Oil
Cut the avocados in half and remove pits. Scoop out flesh and place in a bowl. Roughly mash the avocado. Finely chop the onion, garlic, tomato, jalapeño and cilantro. Add to the bowl. Finish with lime juice, salt and olive oil. Mix together. Serve chilled.
