The history of the macaron is storied and contested but their origin might trace back to the Arab occupation of Sicily in 827. Two nuns who sold the almond cookies during the French Revolution are credited with popularizing them but it wasn’t until the 1930s that macarons were sold as sandwiches with different fillings. Pierre Desfontaines is considered to be one of the inventors of the macaron. Again, the history is debated but Pierre may have been the first to make a sandwich of two delicate macaron cookies at his bakery, Ladurée. Established in 1862, Ladurée sell 15,000 macarons a day at locations all around the world including Vancouver.
Thierry just opened a third location in Greater Vancouver. They make chocolates and pastries and sell hundreds of macarons a day. Their fall line-up just launched which includes maple pecan, cassis, nutmeg rum, and plum amaretto.
Now the focus of Crackle Creme in Chinatown, as the name suggests, is crème brûlée but they also have the most adorable macarons shaped like Totoro, Pikachu, and Hello Kitty. Their new flavours for October will launch soon.
Bon Macaron Patisserie is located in the Granville Island Market. Not only do they sell over fifty flavours of macarons, they also teach classes so you can learn how to make your own. Bon Macarons has savoury as well as sweet macarons, including beet with goat cheese.
Faubourg brings Parisian elegance to their four cafe locations around Vancouver. Covering the bases of boulangerie as well as patisserie, they sell bread and pastries like macarons and there is always an assortment of fresh, seasonal flavours.
