National Noodle Day is right around the corner (October 6) and, to celebrate our country’s love of “noods” at home, we invite you to browse drool-worthy recipes from Canadian YouTube creators to make National Noodle Day as tasty as ever. First up, Danny, or PapaBwoi, who hails from Montreal, and offers on his channel recipes for Chicken phoVietnamese Pho and Hand-pulled spicy Sichuan noodles. —Vita Daily

Hello! Please tell us a bit about yourself to start.

My name is Danny or @papabwoi on YouTube. I make food related videos centered around humour and upload them to the internet. I used to work in the financial industry but always had a passion for food just like my brother and father who are both professional chefs. Two years ago, I bought a camera and naturally decided to film myself cooking, and since then I’ve been sharing my recipes, cooking and humour with the world on YouTube. Today, my mom doesn’t quite understand what I do for a living but my friends like to call me a food content creator.

National Noodle Day is right around the corner; why are noodles one of your favourite snacks/eats?

Because noodles are one of the most versatile foods you can have in your pantry as they can easily be served for breakfast, lunch or dinner. It’s all about what you decide to eat them with. You can have a fried egg on top of a bowl of Soba noodles for breakfast just like how you can end your day with rice noodles and chicken broth!

What’s your go-to noodle dish or recipe?

I might be biased here since I grew up on this but my go-to noodle dish is Vietnamese Pho! Coming from a Vietnamese household, Pho is the ultimate comfort food for me. This dish holds a special place in my heart as I remember my mom simmering pho broth for 8 hours before my brother and I were finally able to eat. So now, every time I need some warmth or a hug from the inside, I make sure to get myself a bowl. For instance, everyone around me knows that locating a Vietnamese restaurant the moment I land in a different city is top priority! It’s my way of feeling like I’m at home with my family when I’m away.

Top tips to our readers, to help them easily jazz/spice up their noodles at home?

Easy! So many ways of doing this. I always tell people to use noodles as a blank canvas and add their leftover protein and veggies on top as it’s a great way of minimizing waste but also to be creative and explore other ways of eating noodles! But if I had to choose 1 ingredient to spice up their noodles at home then it would 100% be a crispy fried egg with a runny yolk.

Final question: spoon, fork or chopsticks?

Chopsticks and spoon combo. Eat the noodles with chopsticks and slurp the broth with a spoon.
