Hot Cross Buns
Yields 12 Buns (60g)
Dough:
- 75g Milk
- 5g Dry Yeast
- 35g Sugar
- 50g Vegetable oil
- 1.5 Large Eggs
- 300g All-purpose Flour
- 2g Lemon Zest
- 2g Orange Zest
- 3g Salt
- 1g Ground Cinnamon
- 1g Ground Allspice
- 1g Ground Nutmeg
- 1g Ground Clove
Fruit:
- 50g Raisins
- 50g Dried Cranberry
- 50g Dried Apricots
- 250g Water
Hot Glaze:
- 50g Sugar
- 50g Water
Icing:
- 60g Icing Sugar
- 50g Water
- Soak the dried fruit ingredients in water.
- For the dough, combine all the ingredients in a mixing bowl on low speed. Increase the speed by one and knead until the dough is smooth and elastic, about 5 minutes.
- Drain out the water from the soaked fruit, toss it in the bowl with the dough, mixing until combined.
- Scrape the dough into a lightly oiled bowl, cover with plastic and let it rise for 75-90 minutes, or until it has doubled in size.
- Place risen dough onto a lightly floured surface and divide it into ball shapes, each 60g. Place buns on a greased rectangle ring, cover with a plastic wrap, letting the buns rise for 45 minutes.
- Combine icing ingredients. Decorate buns before placing in the oven.
- Bake it at 350 F for 25-30 minutes, with low fan.
- Brush syrup on top of the buns once out from the oven. Enjoy!
