Ingredients

For the Dough

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 1/2 cups warm water (110°F or 45°C)
  • 3 1/2 to 4 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt

For the Toppings

  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • Red bell pepper, diced
  • Cherry tomatoes, halved
  • Orange bell pepper, diced
  • Yellow bell pepper, diced
  • Corn kernels
  • Green bell pepper, diced
  • Spinach leaves, chopped
  • Broccoli florets, chopped
  • Blue/purple cabbage, shredded
  • Red onion, thinly sliced
  • Black olives, sliced (optional)

Instructions

Making the Dough

  1. Activate the Yeast: In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the top, stir gently, and let it sit for 5-10 minutes until foamy.
  2. Mix the Dough: In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until the dough starts to come together.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for about 8-10 minutes, until smooth and elastic. Add more flour if the dough is too sticky.
  4. Let it Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.

Preparing the Toppings

  1. Prepare the Vegetables: Wash and chop all the vegetables into small, uniform pieces.

Assembling the Pizza

  1. Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.
  2. Roll Out the Dough: Punch down the risen dough and divide it in half if making two pizzas. Roll out each portion on a floured surface into a 12-inch circle.
  3. Add the Sauce: Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges.
  4. Add the Cheese: Sprinkle the shredded mozzarella cheese evenly over the sauce.
  5. Add the Toppings: Arrange the chopped vegetables in sections to create a rainbow effect:
    • Red: Red bell pepper and cherry tomatoes
    • Orange: Orange bell pepper
    • Yellow: Yellow bell pepper and corn kernels
    • Green: Green bell pepper, spinach leaves, and broccoli
