Creating a fruit salad with exotic fruits can be a delightful and unique culinary adventure. Here’s a recipe that incorporates a variety of exotic fruits to create a vibrant and delicious salad.

Exotic Fruit Salad

Ingredients:

  • 1 dragon fruit (pitaya), peeled and cubed
  • 1 starfruit (carambola), sliced into star-shaped pieces
  • 1 mango, peeled and cubed
  • 1 papaya, peeled, seeded, and cubed
  • 1 passion fruit, pulp and seeds scooped out
  • 1 kiwi, peeled and sliced
  • 1 lychee (or a small can of lychee, drained)
  • 1 rambutan, peeled and seeded
  • 1 persimmon, peeled and cubed
  • 1 pomegranate, seeds only
  • 1/2 cup fresh coconut, shaved or cubed
  • Fresh mint leaves, for garnish
Dressing:
  • 2 tbsp lime juice
  • 1 tbsp honey or agave syrup
  • 1 tbsp fresh orange juice
  • Zest of 1 lime

Instructions:

Preparing the Fruit:
  1. Dragon Fruit: Peel and cube the dragon fruit. Set aside.
  2. Starfruit: Wash the starfruit and slice it into star-shaped pieces. Remove any seeds.
  3. Mango: Peel the mango, then cut the flesh away from the pit and cube it.
  4. Papaya: Peel, seed, and cube the papaya.
  5. Passion Fruit: Cut the passion fruit in half and scoop out the pulp and seeds.
  6. Kiwi: Peel and slice the kiwi.
  7. Lychee: If using fresh lychees, peel and remove the seeds. If using canned, drain them well.
  8. Rambutan: Peel and remove the seed.
  9. Persimmon: Peel and cube the persimmon.
  10. Pomegranate: Cut open the pomegranate and remove the seeds.
  11. Coconut: Shave or cube fresh coconut.
Assembling the Salad:
  1. In a large bowl, gently combine all the prepared fruits.
  2. In a small bowl, whisk together the lime juice, honey or agave syrup, orange juice, and lime zest to make the dressing.
  3. Pour the dressing over the fruit and gently toss to coat evenly.
Serving:
  1. Garnish the fruit salad with fresh mint leaves.
  2. Serve immediately, or refrigerate for up to 2 hours to allow the flavors to meld.
