SMEG’s Perfect Lasagna
For the Pasta Dough:
- 2 cups all-purpose flour
- 3 large eggs
- 1 tsp olive oil
- 1/2 tsp salt
For the Marinara Sauce:
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 2 cans (28 oz each) crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 tsp sugar
For the Béchamel Sauce:
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 4 cups whole milk
- 1/4 tsp nutmeg
- Salt and pepper to taste
For the Assembly:
- 2 cups ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 4 cups shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
1. Prepare the Pasta Dough:
- In the SMEG 50’s Style Stand Mixer, combine the flour, eggs, olive oil and salt.
- Attach the SMEG Dough Hook Accessory and mix on low speed until the dough comes together.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
2. Prepare the Marinara Sauce:
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the crushed tomatoes, oregano, basil, salt, pepper, and sugar (if using).
- Simmer for 30 minutes, stirring occasionally.
- Use the SMEG Hand Blender to blend sauce until smooth.
3. Prepare the Béchamel Sauce:
- In a saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for 1-2 minutes until lightly golden.
- Gradually add the milk, while whisking constantly
- Add nutmeg, salt, and pepper.
- Cook until the sauce thickens, stirring frequently.
4. Roll Out the Pasta Dough:
- Divide the rested dough into four pieces.
- Using a pasta machine or rolling pin, roll each piece into thin sheets.
- Cut the sheets into lasagna-sized noodles.
5. Assemble the Lasagna:
- Preheat the SMEG Countertop Combi Steam Oven to 375°F.
- In a bowl, combine the ricotta cheese, egg and Parmesan cheese.
- In a lasagna dish, spread a layer of marinara sauce.
- Add a layer of pasta sheets, followed by ricotta mixture, béchamel sauce and mozzarella cheese.
- Repeat the layers, finishing with a layer of marinara sauce and mozzarella cheese on top.
6. Bake the Lasagna:
- Place the assembled lasagna in the SMEG Countertop Combi Steam Oven.
- Bake for 30-35 minutes until bubbly and golden on top.
- Let the lasagna cool for 10 minutes before serving.
- Garnish with fresh basil leaves.
