- 1 tsp lemon juice

Instructions:
- Prepare the Herb Mayo (Optional):
- In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, chopped herbs, salt, and pepper. Set aside.
- Cook the Eggs:
- In a bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
- Heat the butter in a non-stick skillet over medium-low heat until melted. Pour in the egg mixture.
- Stir gently and continuously with a spatula, cooking the eggs slowly to achieve a soft, creamy texture. Just before the eggs are fully set, stir in the shredded cheddar cheese if using. Remove from heat.
- Assemble the Sandwiches:
- If desired, spread a thin layer of the herb mayo on the cut sides of the croissants.
- Place a slice of cheese on the bottom half of each croissant.
