Mashed Potato Balls With A Molten Cheesy Center

This decadent dish combines creamy mashed potatoes with a gooey, molten cheese surprise in the center. Perfect as a show-stopping side dish for any meal or holiday feast!


Ingredients

Mashed Potatoes:

  • 2 lbs (about 6 medium) potatoes (Yukon Gold or Russet work best), peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1/4 cup sour cream (optional, for extra creaminess)
  • Salt and pepper to taste

Cheesy Center:

  • 1 1/2 cups shredded cheese (mozzarella, cheddar, or Gruyère work well)
  • 1/4 cup cream cheese or mascarpone (optional, for extra gooeyness)
  • 1 tsp garlic powder (optional, for flavor)
  • 1/2 tsp paprika or cayenne pepper (optional, for a little kick)

Instructions

Step 1: Prepare the Mashed Potatoes

  1. Place the peeled and cubed potatoes in a large pot of cold, salted water. Bring to a boil and cook until the potatoes are fork-tender (about 15–20 minutes).
  2. Drain the potatoes and return them to the pot. Allow them to sit for a minute to release excess steam.
  3. Mash the potatoes using a potato masher or ricer until smooth.
  4. Stir in the butter, heavy cream, sour cream (if using), salt, and pepper. Adjust seasoning to taste. Set aside to cool slightly.

Step 2: Prepare the Cheesy Center

  1. In a small bowl, mix the shredded cheese with cream cheese (if using), garlic powder, and paprika or cayenne pepper. Form the cheese mixture into small balls or discs about 1 inch in diameter (adjust based on your desired size).

Step 3: Assemble the Dish

  1. Preheat your oven to 375°F (190°C) if baking, or set up your stovetop for frying if pan-searing.
  2. Take a scoop of mashed potatoes (about 1/4 cup) and flatten it slightly in your hand. Place a cheese ball in the center and wrap the potatoes around it, forming a smooth, sealed ball. Repeat until all the mashed potatoes are used.

Step 4: Cook the Potato Balls

Baking Method:

  1. Place the stuffed potato balls on a greased baking sheet or in a muffin tin.
  2. Brush each potato ball with melted butter or olive oil.
  3. Bake for 15–20 minutes or until the tops are golden and crisp.

Pan-Frying Method:

  1. Heat a shallow layer of oil in a nonstick skillet over medium heat.
  2. Fry the potato balls until golden brown on all sides, about 3–5 minutes per side. Drain on paper towels.

Step 5: Serve and Enjoy

  1. Serve the mashed potato balls hot, garnished with fresh parsley, chives, or a sprinkle of paprika for color.
  2. When cut open, the molten cheese center will ooze out for a truly indulgent experience!
