As Yes Shef, the celebrated culinary event spotlighting women in the food and beverage industry, gets set to make its Ontario debut on Monday, March 9, 2026 at RC Show 2026, taking place at The International Centre in Mississauga, some of Canada’s most talented women chefs are prepping to take centre stage. We caught up with one of this year’s culinary stars to talk mentorship, inspiration, and what she’s serving up at this landmark celebration of women in food and drink. —Noa Nichol

Since Yes Shef! is all about pairing established pros with the next generation of talent, if you could go back in time and cook one meal for your younger self on your first day of culinary school, what would it be?

If I could go back to my very first day at culinary school, I would bring a classic tiramisu.

The deep fragrance of freshly brewed coffee would rise first – rich, bold, and energizing. the mascarpone cream – soft, smooth, and gently sweet. Tiramisu is not just a dessert; it is a lesson in contrast and composition. It is about understanding how flavours, like experiences, come together to create something complete.

Of all the signature dishes you’ve created throughout your career, which one holds the most personal story for you, and where can our readers find the recipe (or a table to taste it) right now?

One of the most personal and unforgettable days in my career was during an internal competition at work. The competition was important, it was our chance to challenge ourselves, to be creative, and to show what we were capable of. Then, two days before the competition, the key components I needed – my prepared pieces and some essential materials – were missing. I had only two days left, and my original concept was impossible to complete.

I had two choices: give up, or start again.i chose something simpler but powerful – a tart. I focused on balance, technique, and clean flavours. That day, I didn’t just win a competition. I won confidence in myself.

That is apple tarte tatin, and it’s available at the Fairmont Royal York.

What is the one song or album that is guaranteed to be playing in your kitchen to get the team hyped during a busy Friday night service?

On a busy Friday night in the kitchen, when orders are flying in and the pressure is high, there’s one song I always recommend to get the team hyped and fully energized: Believer by Imagine Dragons. It’s reminds us to turn pressure into power and stress into focus.

After a long night of hosting tasting stations and mentoring students, what is your ultimate, “no-judgment” comfort food that you crave the second you get home?

After finishing a long day of duties,I do that simple routine – shower, cook, eat what I love – is what makes me feel complete and truly satisfied at the end of a long day.
