Cauliflower Mac and Cheese with Kale and Nutmeg Penne and Crispy Bacon
Makes: 6-8
Ingredients:
Diced bacon
8 slices
Cauliower
½ head, cut into small florets
Chicken stock or broth
1 cup low or no sodium
Reserved bacon fat or
unsalted butter
5 tbsp
Onion
½, grated
Garlic
2 cloves, pureed
All-purpose four
3 tbsps
Whole milk
1½ cups
Grated cheese
2 cups (combination of cheddar, mozzarella and gruyere)
Dijon mustard
1 tbsp
Cayenne powder
½ tsp (or to taste)
Smoked paprika
1 tsp
Salt and black pepper
to taste
Parmesan
¼ cup (approx.) freshly grated for topping
For the Nutmeg
Penne Pasta (300G)
Flour
1 pasta maker cup (combination of semolina and all-purpose flour as per Philips recipe book)
Pinch salt
Nutmeg
½ tsp freshly ground
1 egg + water
90 ML mixture
For the Kale
Penne Pasta (300G)
Flour
1 pasta maker cup (combination of semolina and all-purpose flour as per Philips recipe book)
Pinch salt
1 egg + kale juice
90 ML mixture
Preparation:
Preheat oven to 400°F and grease a 9 x 9 casserole dish with butter or
olive oil. Bring to simmer a large stock or sauce pot full of boiling salted
water for pasta.
Place a large sauté pan over medium heat and cook bacon until crispy.
Set bacon aside on paper towel lined plate, reserving 5 Tbsp of bacon
fat to make cheese sauce.
Steam cauliower orets until fork tender and set aside.
In a large saucepot over medium low heat cook pureed onion and garlic
in bacon fat for 3-4 minutes, stirring occasionally.
Stir in our with wooden spoon and continue to cook, while stirring, for
3 minutes. This will create a paste called a roux that will be used to
thicken the cheese sauce.
Take pot off heat and slowly ladle in milk and stock while whisking. Once
liquid is incorporated, return to medium heat and bring to simmer.
Continue whisking until thickened.
Whisk in dijon, cayenne powder, and smoked paprika. Stir in grated
cheeses until melted and season with salt and pepper to taste. Take o
heat and set aside.
Simmer fresh penne pasta in stockpot of salted water for 2-3 minutes or
until al dente. Drain well.
Fold cooked pasta, chopped steamed cauliower, and bacon into
cheese sauce. Transfer to greased casserole dish and sprinkle with
Parmesan. Bake approximately 20 minutes or until browned on top and
bubbling on the sides.
For Nutmeg Penne Pasta
Fit pasta machine with penne disc. Add nutmeg along with our and
salt in pasta machine. Continue to make penne pasta according to
Philips Pasta Maker instructions.
For Kale Penne Pasta
Make according to Philips Pasta Maker instructions for vegetable
infused pasta.
