Good news for lovers of steak frites, escargot and cozy Parisian bistro vibes: Les Faux Bourgeois has officially reopened.
The Fraserhood favourite has entered an exciting new chapter following a thoughtful refresh, welcoming guests back with an updated dining room, a revitalized menu and the same neighbourhood charm that has made it one of Vancouver’s most cherished restaurants for years.
Now under the stewardship of Gaia House—the hospitality group behind acclaimed restaurants Nammos Estiatorio, Selene Aegean Bistro and AMA—the beloved bistro has retained its French soul while introducing plenty of fresh reasons to book a table.
Leading the kitchen are co-chefs David Cassese and Brent Thornton, whose menu celebrates classic French comfort food with a modern West Coast sensibility, showcasing hyper-local ingredients and dishes designed for sharing.
Seafood lovers will want to begin at the new Raw Bar, where highlights include Torched Prawns with spicy Clamato dressing and King Salmon paired with wild herb sauce. Familiar favourites like Escargot en Cocotte and Steak Tartare remain, while newcomers such as Oeuf Mayonnaise topped with trout roe and white anchovy bring a fresh twist to traditional bistro fare.
When it comes to mains, the menu delivers exactly what regulars have come to expect—rich, satisfying French classics elevated with thoughtful touches. Think perfectly cooked Steak Frites with peppercorn sauce, decadent Duck Bordelaise served alongside crisp pomme pavé, and Moules Frites swimming in a fragrant bouillabaisse broth.
And before longtime fans panic: yes, the restaurant’s legendary French Onion Soup is coming back this winter as a seasonal favourite.
Dessert is equally tempting. Warm Beignets aux Pommes finished with a Sortilège maple whisky glaze practically demand to be shared, while a silky Chocolate Mousse with poached pear offers a decadent finale. A dedicated late-night menu is also slated to arrive later this summer.
Behind the bar, Gaia House Beverage Director Dylan Riches has crafted a cocktail list that feels every bit as playful as the menu itself, featuring inventive pours like an Elderflower Pastis, Truffle Martini, and even a Bourguignon Highball, alongside a thoughtfully curated wine list built for leisurely French-inspired dinners.
The refreshed restaurant is also welcoming a familiar face back to the dining room. Original founder Andreas Seppelt remains part of the front-of-house team, while General Manager Georgio Yacoub—whose résumé includes AnnaLena, ELEM and Burdock & Co.—helps guide the restaurant into its next chapter.
Currently in its soft opening phase, Les Faux Bourgeois will officially celebrate its relaunch on July 8, but diners can already reserve a table and get an early taste of the new menu.
