Who’s ready for summer? We definitely are, and with solstice right around the corner, we’re taking the opportunity to say cheers to our hands-down favourite season with this his tropical twist on a traditional mojito, as imagined by Angie Quaale of Well Seasoned gourmet food store in Langley, B.C. —Noa Nichol
Pineapple Ginger Mojito
2 cups fresh pineapple juice
3 tbsp ginger syrup (available at Well Seasoned)
1/4 cup fresh lime juice
1 bunch fresh mint
Ice cubes
1/2 cup light rum
Club soda
Place mint, lime juice and ginger syrup into a pitcher. Crush with a muddler. Stir in rum and pineapple juice. Fill four tall cocktail glasses with ice. Fill halfway with mojito mix and top with club soda. Garnish glasses with a wedge of fresh pineapple. Summer in a glass 🙂
