At Vancouver’s latest wine bar and not-strictly-Spanish tapas place, sommelier Rachelle Goudreau is on a mission to make sherry and vermouth the next rosé.
“I’m trying to start the aperitivo revolution!” says Goudreau, who created an unbeatable $4 daily happy hour drinks menu at the new VV Tapas Lounge, allowing customers to order quick sips as a flight (check out the Tio Pepe sherry not stocked at local liquor stores). For the non-drinkers—and serious Instagrammers—order the colour-changing Sparkling Unicorn! As for the food, though the restaurant’s not equipped for high-heat cooking, chef Zach Poole defies expectations with his artfully crafted deviled duck egg, lamb scrapple (a deconstructed shepherd’s pie) and risotto (delicately plated with a sous-vide duck egg sauce). Tying it all together is designer Nahal Gamini’s nature-inspired space, featuring an oversized barrel bar with illuminated branches, a cork front and a greenscape wall.
