For Father’s Day, go a little "father" and dad-ify a classic charcuterie board with a few papa-approved items—think savoury chorizo waffles with hollandaise and bacon egg cups. Recipe for this pop-tastic creation below! —Kaylesha Penner
The Ultimate "Dad Board"
Prep Time: 40 minutes
Cook Time: 25 minutes
Servings: 4 (depending on serving sizes)
1 lb breakfast sausage
Savoury Chorizo Waffles (recipe below)
Bacon and Egg Cups (recipe below)
Fresh fruit (strawberries, raspberries, grapes)
Proscuitto-wrapped cantaloupe
Hashbrowns
Hollandaise
Sliced cheese (dad’s favourite)
First, make all items that need to be cooked, in this order: bacon egg cups (recipe below); bacon and sausages; hollandaise; waffles (recipe below). Then, cut all fruit and cheese in the way you want them displayed. For example, you can leave the strawberries, raspberries and grapes whole, and slice the cheese into triangles to add another shape to the platter. To assemble, place the waffles first on two different locations on the board to spread them out. Next, place the bacon eggs cups, then stacks of sausages. Place anything in a bowl (like the hollandaise and the hashbrowns). Top waffles with crumbled chorizo. Start filling gaps with smaller, more moveable items like the prosciutto-wrapped melon and cheese. Next, place all of your fruit to add beauty and colour to your board. You will want to fill up all the gaps with your fruit.
Bacon & Egg Cups
6-12 strips of bacon depending on thickness and length
6 eggs
Sliced bread
Chives, sliced
Salt and pepper
Heavily spray muffin tins with non-stick spray (or else they will stick). Cook bacon until it is flexible but not crispy. Arrange bacon around the edge of each muffin tin. Use a small round cookie cutter to cut out a piece of bread roughly the size of the muffin tin. Place the round bread pieces into the bacon-wrapped cup. Crack an egg on top of the bread. Season with salt and pepper. Bake at 400 degrees for approximately 20 minutes (until egg whites are fully cooked). Garnish with sliced chives.
Savoury Chorizo Waffles
4 Chorizo sausage links
1-1/2 cup flour
2 tbsp sugar
2 tsp baking powder
1 tsp cumin
1 tsp chipotle powder
1 egg
1 cup whole milk
1 cup shredded cheese
2 green onions, sliced
Cilantro, chopped
Salt and pepper
Remove Chorizo sausages from casings and crumble. Cook crumbled Chorizo in a saucepan and saute until fully cooked through. In a large mixing bowl combine flour, sugar, baking powder, cumin, chipotle and salt and pepper, mixing until combined. In a separate bowl whisk the egg and then add in the milk. Add the dry ingredients to the wet ingredients and mix well. Add half of the crumbled chorizo, cheese, green onions and cilantro and mix. Heavily spray the waffle iron with non-stick spray and then add waffle mixture. Cook until fully cooked through and crispy on the outside. Top with crumbled Chorizo and hollandaise or syrup.
