With our fave vegan (and East Van neighbour!) Erin Ireland recently touting the many virtues of tofu on social, we’re ready to try this superfood, too! Lucky for us, Canada’s Quesada Burritos & Tacos, known for fresh Mexican-inspired flavours, has announced an all-new smoky and flavourful vegan option, Saucy Chipotle Tofu. Made with tender cubes of tofu simmered in a delicious chipotle-tomato sauce, this protein is guaranteed to leave everyone craving it—vegans, vegetarians and flexitarians alike. Saucy Chipotle Tofu is part of a clean ingredient line, made with non-GMO soybeans and is gluten free. Here’s how to make a similar version at home. —Vita Daily
Saucy Chipotle Tofu
½ cup Tomato Paste
2-3 Tbsp Canned Chipotle Peppers in adobo sauce (or more for spicier)
1 tsp Ground Cumin
1 tsp Smoked Paprika
1 tsp Garlic Powder
1 tsp Chile Powder
1 tsp Salt
½ tsp Black Pepper
2 Tbsp Canola or Avocado Oil
1 ¾ cups Water
2 Packages (350 g each) Extra Firm Tofu
In a small bowl, mix together tomato paste, minced chipotle peppers, all of the spices and salt. In a large saute pan, heat oil over medium heat, then add the paste mixture. Heat for 1-2 minutes, stirring constantly. Slowly pour in the water and stir until combined. Bring to a gentle boil. Add the tofu and stir until combined. Cover with a lid or foil and reduce heat to medium low. Simmer until sauce thickens and tofu is heated through; about 10 to 15 minutes. Stir occasionally. Taste and adjust seasonings, if necessary. Serve warm. Serves 6.
