We all know overnight oats by now: they’re basically a no-cook method of making oatmeal. Rather than cooking oatmeal in a pot on the stove or in the microwave, you soak the raw oats with milk, allowing them to absorb the liquid and soften enough to eat uncooked. You only need to let the oats soak and rest in the fridge for two hours but, it’s ideal if you leave them overnight … hence the name overnight oats! Blueberry Lemon Overnight Oats
- 1/2 cup rolled oats
- 1/2 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 1/2 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1 tbsp honey
- 1/4 cup fresh blueberries
In a bowl or jar, mix together the rolled oats, almond milk, Greek yogurt, lemon zest, lemon juice, and honey until well combined. Stir in the fresh blueberries. Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight, or for at least 6 hours. In the morning, give the oats a stir and add a splash of almond milk if they’re too thick. Serve the oats cold, garnished with additional blueberries and lemon zest, if desired.
