Whether you knew it or not, April 5 is Deep Dish Pizza Day, a day to celebrate the famed pie (often called Chicago-style pizza) that’s baked in a pan with an extra-“tall” crust. Here’s a recipe for a delicious deep dish pizza with asparagus and goat cheese toppings; make it and celebrate! —Vita Daily
- 1 pound pizza dough
- 1/4 cup olive oil
- 1/4 cup cornmeal
- 1/2 cup tomato sauce
- 1/2 cup crumbled goat cheese
- 1/2 pound asparagus, trimmed and blanched
- Salt and pepper, to taste
- 1 tablespoon chopped fresh thyme
Preheat the oven to 425°F (218°C). Grease a 10-inch cast iron skillet with 1 tablespoon of olive oil. Sprinkle the cornmeal over the bottom of the skillet. Roll out the pizza dough into a circle that is slightly larger than the skillet. Carefully place the dough into the skillet, allowing the excess dough to hang over the edge. Brush the remaining olive oil over the dough. Spread the tomato sauce evenly over the dough. Sprinkle the crumbled goat cheese on top of the sauce. Arrange the blanched asparagus on top of the cheese. Season with salt and pepper to taste. Sprinkle the chopped thyme over the top of the pizza. Fold the excess dough over the toppings to create a thick crust. Bake for 30-35 minutes or until the crust is golden brown and the cheese is melted and bubbly. Remove from the oven and let the pizza cool for a few minutes before slicing and serving.
