Here’s A Spirited Way To Raise A Cuppa To Mom This Year

Here’s a fun cocktail to shake up for mom. A Canadian company, located in the heart of Niagara wine country, Dillon’s offers a full range of spirits, prepared cocktails, bitters and mixes for at home cocktailing and sipping. The “Spill the Tea” recipe incorporates Dillon’s Unfiltered Gin 22 (floral and fresh with an impressively smooth mouthfeel thanks to the unique grape base made from 100 per cent local wine grapes and vapour distilled through 22 botanicals), Dillon’s Lemon Bitters (offering the scent and taste of lemon, with highlights of cardamom and coriander), along with tea and honey. For a whimsical touch, the suggested glassware for the cocktail is vintage teacup.

Spill The Tea

1.5 ounces Dillon’s Unfiltered Gin 22
0.5 ounce honey syrup
2 ounces steeped tea
3 dashes Dillon’s Lemon Bitters
Lemon flower or wheel, for garnish

Make the honey syrup. In a pot add ½ cup honey and ½ cup water. Bring up to a simmer and stir until combined. Remove from heat, let cool and transfer to an airtight container. Syrup will keep up to two weeks in the refrigerator. Make the tea as per instructions on packaging. Let cool and set aside. To a cocktail shaker, add the gin, syrup, tea and bitters. Add ice and shake for 10-15 seconds. Strain the cocktail into a vintage teacup and garnish with lemon.
