On June 1 Fairmont Pacific Rim’s award-winning culinary team, in partnership with Westbank, will introduce Vancouver to a first-of-its-kind concept, uniting a selection of Vancouver’s most celebrated Michelin Guide-recognized culinary talents for a six-week pop-up at the Pac Rim Patio.
Throughout the season, the featured chef and restaurant will design a summer-inspired dish that will be available only for four days at the Pac Rim Patio. Together with the hosting home chef Hector Laguna of Botanist, the lineup includes Gus Stieffenhofer-Brandson (Published on Main), Lý Nguyen and Vincent Nguyen (Anh & Chi), Andrea Carlson (Burdock & Co), Lee Cooper (L’Abattoir) and Michael Zafirian (Bacaro).
Recognized as Vancouver’s living room, bringing the community together through unique cultural experiences, Fairmont Pacific Rim’s new patio concept will invite guests to immerse themselves in the culinary fabric of the city through dishes rooted in the heritage of each highly lauded chef’s innovative cooking style. This is the latest program in Fairmont Pacific Rim’s ongoing mission to celebrate, showcase and support artistry in all forms.
The official summer schedule will kick off on June 1 and will run through August 27. For every feature chef dish sold, a portion of proceeds will be donated to the BC Hospitality Foundation.
Along with the weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck will serve a fresh summer menu perfect for outdoor dining. To accompany Campbell’s dishes, a selection of refreshing Malfy Gin cocktails including G&T’s, Spritzes and other summertime sippers, alongside an extensive selection of craft beers, local and international wines will be available.
