Raufikat Oyawoye’s Nigerian Coconut Rice + Chicken Dish

Serves 2

For the chicken:

2 chicken thighs, cut into 1-inch pieces
1 tablespoon chicken broth powder
1 teaspoon black pepper

For the rice:

3/4 cup basmati rice, washed until water runs clear, then drained
1/2 red pepper, diced
1 – 3 green chilies, finely chopped
1/2 medium onion, chopped
3 cloves garlic, chopped
3/4 cup coconut milk
6 tablespoons water
1 tablespoon chicken broth powder
2 tablespoons oil
1/4 cup shredded unsweetened coconut
Chopped parsley, to garnish (optional)

Steps:

  1. Preheat the oven to 400F
  2. Season the chicken with 1 tablespoon of chicken stock powder and 1 teaspoon of black pepper. Set aside
  3. In a Medium Endurables™ Container, combine coconut milk, water, chicken broth powder and rice
  4. Place the Endurables™ Container on a Microwave-safe dish and microwave for 4-5 minutes, until the coconut milk is boiling. Ensure the zipper is left open 2.5cm to vent while in the microwave
  5. Once cool enough to handle, use the Cool Grab Tabs™ to carefully transfer the Endurables™ Container onto a baking sheet
  6. Add the peppers, onions, oil, garlic and coconut to the rice, mix well
  7. Spread the chicken on top of the rice
  8. Place in the oven for 30 minutes, with the zipper open 2.5cm to vent
  9. Using oven mitts, remove the tray from the oven, then use a fork to fluff up the rice and mix in the chicken. Allow to cool before handling
  10. Serve and garnish with parsley

    In the summer, favourite meal prep is marinated chicken breast or cutlets and then grilling them on the BBQ with some lovely rice pilaf and grilled veggies.
