Zucchini Kebabs:
Ingredients:
- 2 medium zucchinis
- 1 red onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 pound (450g) of your choice of protein (chicken, beef, or tofu), cut into bite-sized pieces
- Olive oil
- Salt and pepper, to taste
- Wooden skewers (pre-soaked in water if using)
Marinade:
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions:
- In a bowl, mix together the marinade ingredients.
- Place the protein pieces in the marinade, ensuring they’re well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- While the protein is marinating, prepare the vegetables. Cut the zucchinis, red onion, and bell peppers into chunks.
- Preheat the grill to medium-high heat.
- Thread the marinated protein, zucchini, onion, and bell peppers onto the skewers, alternating the ingredients.

- Season with salt and pepper to taste.
