Recipe: On-the-Fly BBQ Sauce

Tobias Girgnon, executive chef at Vancouver’s Mamie Taylor’s restaurant, shares this easy sauce, perfect for throwing together using ingredients you already have in your fridge. Rub it on chicken or ribs.

Ingredients:

1 cup 49th Parallel Cold Brew Coffee (or substitute cold drip coffee)

¼ cup ketchup

3 tbsp tomato paste

½ cup brown sugar

1/3 cup red wine vinegar

1/3 cup Worcestershire sauce

1 tsp ground allspice

1 tsp chipotle powder

1 tsp garlic powder

1 tsp paprika

1 tsp mustard powder

2 tsp salt

Preparation:

Combine all ingredients and whisk together until smooth. 

For chicken: Marinate chicken with this sauce in the fridge for a few hours. Baste a few times with more sauce while grilling.

For ribs: Simmer ribs in a pot for 45 minutes to 1 hour. Remove ribs, pat dry with paper towel and brush warm ribs liberally with sauce. Place on grill. Brush sauce on liberally a few more times while cooking and just before serving.
